Exotic mushrooms are delicious, nutrient-rich, and incredibly rewarding to grow. Whether enjoyed fresh or cultivated on logs, they offer flavours and textures far superior to mass-produced varieties. Our mushroom journey is rooted in patience, care, and a commitment to sustainable growing.

Our Growing Process
Choosing the right species
We begin by selecting premium mushroom species known for their flavour, texture, and culinary versatility. Our curated range includes, lion’s mane, poplar, and several oyster varietals, each chosen for its unique characteristics. Some offer robust, meaty profiles ideal for plant-based cooking, while others provide gentle earthiness or delicate sweetness.
Preparing and inoculating the logs
Once the hardwood logs are prepared, they are carefully inoculated with high-quality mushroom spawn. This involves introducing spores directly into the wood, where they can establish themselves without disturbance. The inoculated logs are then transferred into controlled environments where temperature, humidity, and light exposure are maintained with precision. This creates the ideal conditions for the mycelium to colonise the wood at a natural, healthy pace.

Monitoring moisture and airflow
Throughout the colonisation and growing period, we conduct daily assessments to keep the logs at their optimal moisture levels. Adequate airflow is equally important, preventing stagnation and ensuring the developing mushrooms receive sufficient oxygen. These subtle environmental adjustments are key to supporting strong, healthy mycelial growth and consistent fruiting.
Encouraging fruiting and development
As the mycelium fully colonises the wood, the logs are gradually exposed to conditions that mimic natural seasonal shifts. This encourages the fungi to initiate fruiting. Carefully controlled humidity and ventilation ensure that each mushroom develops with ideal shape, density, and structure.

Harvesting at peak freshness
When the mushrooms reach their perfect size and firmness, they are hand-harvested to preserve quality. This close attention to timing guarantees the best possible flavour, aroma, and nutrient content. Handpicking also protects the mycelium within the log, allowing for repeat harvests.
Sustainable and long-lasting production
This meticulous log-growing method takes patience, but the result is exceptional. Each log produces multiple flushes over its lifetime, offering a sustainable yield of premium mushrooms. The process supports natural growth patterns, reduces waste, and delivers consistently high-quality produce.
